In just a couple of weeks spring will be here! Here in Minnesota we have had a lot of snow and more predicted this weekend. The good news is that warm days are ahead, yay! With those warmer days, new produce will be in season. Here is what March will bring and as always, I have shared recipes for each produce.
March In-Season Produce
- Asparagus – Oven Roasted Asparagus
- Avocado – Chicken Burger with Avocado and Jalapeno Sauce
- Cabbage – Asian Meatballs with Sauteed Cabbage
- Cauliflower – Roasted Asparagus, Cauliflower, and Mushroom Soup
- Leeks – Buttered Leeks (anything with butter is good, right?)
- Mushrooms – Grain-Free Chicken Noodle Soup
- Peas – Italian Peas
- Radishes – Radish and Avocado Sandwich
- Spring Greens – Spring Greens with Oranges
- Sweet Potato – Sweet Potato Bake
