Wow, it is already May! Many gardeners in some areas are probably planting their gardens already. Here in Minnesota, some cold season vegetables can be planted, but most must wait a few more weeks in case we have a frost. Anyway, back to May’s list of in-season produce. A new one for this month is mango which is such a treat for us. Growing up, I had never had mango, but once I tried it as an adult, I just love their taste. How about you?

Here is your list with a recipe for each one.

 

  • Asparagus – Fermented Asparagus
  • Avocado – I like to add half an avocado to my salad. It adds just the right creaminess.
  • Beets – Beet Kvass; Beet kvass is a great liver tonic. I have been drinking it pretty much daily for the past two months. I am currently brewing a batch with golden beets.
  • Broccoli – Roasted Broccoli 
  • Cauliflower – Creamy Roasted Cauliflower Soup; This can be a great soup on a cool spring day which we have been having here in Minnesota this spring.
  • Kale – Sauteed Kale with Garlic and Olive Oil  
  • Leeks – Braised Leeks 
  • Mango – Fruit Salsa with Apple Chips; this recipe works great for pretty much any fruit!
  • Mushrooms – Mushroom Stroganoff, as a kid I HATED mushrooms and picked them out of everything, but now as an adult I love them. This recipe would be great for a meatless meal or as a side to chicken, beef or pork.
  • Peas – French Spring Vegetable Stew, this recipe has a lot of spring vegetables and would be fun to try if you have a CSA with a lot of vegetables to use.
  • Radishes – Pan Fried Radishes with Bacon. Bacon makes everything taste wonderful, right???
  • Rhubarb – Rhubarb Chutney. Chutneys can add such flavor to food, and love how this recipe is sweetened with honey instead of sugar.

I encourage you to eat in season as much as possible; it will provide the most fresh and nutrient-dense foods. Growing your own or supporting your local farmers are great ways to invest in yourself and your community, too.
