Did you know that the avocado is also known as the alligator pear? Depending on the variety, they can weigh from 8 ounces and up to 3 pounds. I cannot imagine a three-pound avocado!

Avocado Bites
Ingredients
- 1 organic ripe avocado, peeled, and pitted
- 1/2 cup organic fresh basil leaves
- 1-1/2 tablespoon lemon or lime juice
- 1 to 3 organic garlic cloves (quantity will depend on how much you like garlic!)
- 1/4 teaspoon sea or Himalayan salt
- 1/4 teaspoon pinch black pepper
- 1 pinch pepper flakes
- 1 English cucumber, cut into 1/4 inch slices
- 2 radishes thinly sliced into 1/2 circles
Instructions
- Place the cucumber slices on a paper towel; this will help absorb some of the juice from slices and make adding the avocado topping easier.
- Blend the avocado, basil, lemon or lime juice, garlic, salt, pepper, and pepper flakes in a blender or food processor until smooth.
- When ready to serve, top each cucumber slice with approximately 1 teaspoon of the avocado mixture, then add a radish half circle.
