Eating healthy doesn’t mean you have to sacrifice flavor or treats. I have set out to healthify recipes that have been family favorites over the years. My own health journey altered the foods that are health promoting for me. Gluten is one food that has had to be removed from my diet for now. Gluten has been found to produce inflammatory symptoms in many people. Since I deal with one auto-immune condition, I am working to keep inflammation down. I have actually had to remove all grains from my diet right now. This doesn’t leave a lot of options for baked goods.
I am currently following the Full GAPS healing diet. GAPS is an abbreviation for Gut and Psychology Syndrome and Gut and Physiology Syndrome. Anyway, back to these delicious cookies. The GAPS diet does not include any grains so I have used almond flour for the cookies. Almond flour can be substituted for other flours in many recipes. I replaced the sugar with honey. When baking with honey, you want to reduce the oven temperature a bit as the cookie can burn easier. You will notice that the temperature is 330° instead of 350°. There are raisins in these cookies, and the thing about using dried fruit is you want to use organic as non-organic dried fruit will contain sulfur dioxide for preservation. There have been some negative health concerns in some individuals with sulfur dioxide. The cookies are super easy and won’t last long once you taste their buttery deliciousness. I like to make mine a bit smaller for the grand-kids because even a healthier version should be enjoyed in moderation.

Almond Flour Raisin Cook
These super easy gluten-free cookies will not last long as they are delicious. They are Full GAPS approved!
Ingredients
- 2-1/4 cups almond flour
- 1/2 teaspoon baking soda
- pinch of Himalayan or sea salt
- 1/2 cup softened butter (1 stick), grass fed best
- 1/8 cup raw honey, melted
- 1 large egg, pasture-raised
- 1 tablespoon vanilla extract
- 1 cup organic raisins
Instructions
- Preheat oven to 330 degrees F. Line a baking sheet with parchment paper.
- Blend the almond flour, baking soda, and salt in a large bowl.
- Add the softened butter to the dry ingredients, cream together with pastry cutter or fork until a creamy mixture is formed.
- In a small bowl, blend the honey, egg, and vanilla extract.
- Add the egg mixture to the creamed mixture, stir until well combined. The mixture will be moist. Stir in the raisins.
- Roll into 3/4" to 1" balls and place on prepared baking sheet. The size of the balls will affect the number of cookies you will have.
- Bake in preheated oven for 12 to 15 minutes. The top of the cookies should start to brown. Remove from the oven and allow to cool. Once the cookies are cooled, store in an air-tight container for up to 5 days.
