We usually take one vacation a year. This year we ventured to Colorado. On this vacation, it was the first time we stayed in an Airbnb.
Mount Sopris Retreat is located just south of the town of Carbondale, Colorado. Carbondale is at 6,171 feet elevation near Mount Sopris, in the plains of the Crystal and Roaring Fork Rivers. It is a really beautiful part of Colorado. Carbondale has an average of 295 days of sunshine a year, boasts low humidity, comfortable summers, and about 45 inches of snow per year.

We are blessed to have access to so many foods in our grocery stores. Even though our family tries to eat foods grown locally, we occasionally will venture out and have a food adventure. Sometimes these adventures involve trying out-of-the ordinary fruits and vegetables.
